From croissants filled with Malaysian potato curry to a raspberry black sesame tart, patissiers and bakers are pushing creative boundaries by blending flavor profiles from across the globe. While these fusion flavor combinations can now mostly be found at high-end patissiers and trendy coffee shops, the hybrid creations will probably soon become mainstream through the exposure on social media. Strong growth in markets like Italy (+40%), Turkey (+25%), Germany (+24%) and English-speaking countries (+22%) shows that this flavor trend is moving from niche to mainstream quickly there.

Especially the German (+84%), Turkish (+74%), French (+57%), Italian (+49%) and Chinese (+27%) markets show strong momentum for these tastes. Ingredients such as cardamom, pomegranate and rosewater bring a rich palette of warm, aromatic, and floral notes and evoke a sense of craftsmanship and tradition.

Bakers and chocolatiers are increasingly experimenting with these flavors: adding tahini to chocolate chip cookies or combining saffron and rose in millefeuille instantly elevates the treats by giving them an artisanal and worldly appeal that resonates with today’s experience-driven consumers.

A true standout in the Middle Eastern flavor movement is Dubai chocolate – a viral sensation driven by the irresistible combination of chocolate and pistachio. First, there was the viral chocolate, pistachio and kataifi bar by Fix Dessert Chocolate in Dubai. Then came the imitations. Then the chocolate pistachio donuts, the cheesecakes, the croissants, the macarons and the sundaes. Now, there are recipes circulating for chocolate pistachio overnight oats and there’s chocolate pistachio protein powder available. The combination of well-known chocolate with colorful, luxurious and lesser-known pistachio hits just the right spot with consumers. The flavor pairing had a 231% rise according to our Taste Tomorrow data. This flavor hasn’t reached its peak yet, as many large-scale producers are just starting to launch their own interpretations, so we expect a lot more of this trendy flavor combo in the near future.

Decadent indulgence

Luxurious, high-end ingredients turn ordinary desserts into extraordinary experiences. Truffles, edible flowers and saffron add a touch of opulence, while ingredients like mascarpone, marzipan and butter bring richness in both taste and texture. Pastries with such indulgent flavors offer a memorable experience and sensory escapism. And that is just what consumers are after. They want to mark special moments with impressive pastry they can share online, but also elevate an average weekday with a fancy little treat to lift their spirits.

The viral pistachio butter donut by the Los Angeles-based Old Ferry Donut is a perfect example. The decadent flavors and rich filling are what made TikTokker @vanillamace compare it to ‘a taste of heaven’, causing a run on the treat. The sumptuous donut with upscale flavors feels highly luxurious, yet costs only a few dollars, making it a perfect affordable treat to provide each day with a silver lining.

The demand for affordable luxury through baked goods with decadent flavors continues to grow in Chinese, English, French, Spanish, Portuguese and Turkish-speaking markets. But Italy proves itself as the birthplace of luxury and artisanal craftsmanship; here, the interest is up by a whopping 157%.
