Trend Updates

Classics never go out of style, a cliche that is very true for the traditional layer cake. But the texture trend has given this bakery favorite another push. Online interest in the layer cake has gone up by 43% over the last six months.

Consumers are increasingly seeking desserts that offer multiple sensory experiences in a single bite, and layer cakes deliver exactly that. Soft sponge, creamy fillings, crunchy toppings and chewy inclusions create a journey of textures that keeps every forkful interesting.

The trend is reflected in the 121% increase in online conversations about seven-layer chocolate cake. Whether it's a towering chocolate creation or a fruit-filled sponge, the appeal lies in the contrast. More layers mean more textures, more flavors and more opportunities for surprise.

Bigger, taller and more indulgent

For many consumers, layer cakes have become the ultimate expression of indulgence. The rise of oversized creations – such as the Bertha twelve-layer chocolate cake by Get Baked – demonstrates how "more is more" continues to dominate premium dessert culture.

Brands are responding with increasingly elaborate constructions featuring multiple fillings, ganaches, mousses and crunchy inclusions. Rather than focusing on a single flavor, these cakes create a layered eating experience that evolves with every bite.

Social media has accelerated this trend. Tall cake slices reveal their intricate layers immediately, making them highly visual products that perform well online while reinforcing perceptions of abundance and luxury.

Multi-flavored layer cakes

With 351.6K conversations, layer cakes with multiple distinct flavors are a massive trend. These offer the ultimate layer cake experience, because each bite not just offers contrasting textures, but also another mix of flavors. Eating such a slice offers constant surprise, when new flavor combinations arise. Think of this orange cake with harissa caramel, labneh, mascarpone and pistachio by Karianna Alexa. Or a jasmine-milk soaked vanilla sponge with pear compote, pistachio crème mousseline and marzipan by Spool Oven.

Fruity cakes bring freshness and color

Especially during winter and the holiday season, consumers gravitate towards flavors that evoke warm memories of family traditions and holiday rituals. That’s one of the driving forces behind the resurgence of gingerbread spice. The aromatic mix of ginger, cinnamon, cloves and molasses  generated around 60K online mentions last year, which will easily be matched this year. The signature spice blend instantly communicates warmth, making it an alluring option for cookies, cakes and confectionery, such as the Gnaw Gingerbread Milk Chocolate Bar which features crunchy gingerbread pieces and ginger flavoring.

Pistachio and hazelnut spread continue their reign

Few ingredients have captured consumers' attention like pistachio and Nutella. Interest in hazelnut spread layer cakes has surged by 1,800% over the past year, tapping into the consumer desire for familiar indulgence with an elevated twist. Nutella marble cakes are another standout trend. These layer cakes offer the surprise of beautifully marbled layers when cut. The Nutella flavor is often paired with chocolate or Ferrero Rocher flavors – for instance at CakeCo – to create a recognizable cake that’s popular for celebrations and social sharing.

Pistachio remains one of the biggest premium flavors, often paired with crunchy fillings in Dubai-style cakes. These cakes combine rich chocolate layers with pistachio filling and crispy kataifi pastry to create a luxurious dessert experience that feels both contemporary and indulgent. The popularity of Dubai chocolate started in late 2023, but pistachio flavor shows no signs of slowing down, growing by another 150% the past year.

Rainbow cakes grow 471%

If you are wondering when we’ll see the end of the chocolate and pistachio trend, the trajectory of the rainbow cake might provide some insight. Those colorful creations, combining multiple layers, each in a different rainbow color, first popped up in 2009. Now, consumers are rediscovering these playful layer cakes with interest increasing by 471% over the past year, driven by consumers seeking joyful and visually striking desserts. This resurgence shows consumers don't necessarily want entirely new products. Instead, they are rediscovering familiar favorites that combine nostalgia with social media appeal.

Why layer cakes remain relevant

The continued success of layer cakes reflects a broader shift in consumer expectations. Today's consumers are not simply looking for sweetness. They want contrast, texture, storytelling and visual impact. Layer cakes deliver all four.
