Working Method

  • Melt the Belcolade Selection Cacao-Trace to 40°C.
  • Use a Selmi Comfit machine to coat the roasted Almonds and/or hazelnuts.
  • Follow the correct parameters for the cooling and speed (8-12°C cooling, 50% speed).
  • Add the melted Belcolade Selection gradually to obtain a smooth surface.

Topping Herbalization

Working Method

  • The panning box will be finished in front of the customer with their choice of herbs. Fruit powder can add a bit of fruitiness to the product.
  • By using a little melted Belcolade Pure Prime Pressed Coca Butter Cacao-Trace, the herbs will stick directly on the surface. 
  • Pour some panned nuts in a container, add a bit of melted cocoa butter and finish with some dried herbs and/or fruit powders. 
  • Close the bowl, shake, and eat.
