To fulfil their need for clear product information, consumers examine the packaging for fact-based information such as ingredients, nutritional values, the addition of preservatives, the origin of the product and allergens. It’s obvious that clear labels are crucial in providing transparency. Consumers are also interested in the craftmanship and the history of the product, but they don’t expect this extra information to be on the packaging.

Recipe: Smoked Grains Knot
The edible QR code on this Smoked Grains Knot makes it possible to be transparent about both the ingredients and the making of the product. The QR code provides the story behind the making of the bread, additional information linked to its 100% organic ingredients and its nutritional values.


  • Total flour weight 100%
  • Organic flour 100%
  • Organic salt 2%
  • Water 65%
  • Organic sugar 2%
  • Organic Sproutgrain Rye (delayed) 30%
  • O-tentic Organic 4%
  • Infuse the grains using a smoker to give the grains a smokey note.

Working Method

Mixing Spiral
  • 5 min. slow
  • +/
  • Then take out half the dough and add the grains to the other half and mix for another 2 min.


Dough Temperature


Bulk fermentation

20 min.


200g x 2 with grains and 200 x 1 white

Intermediate proof

10 min.

Make Up
  • Make all pieces 40cm long.
  • Place 2 of the long grains on either side of the white on the table all in line.
  • Then with your hand in the center create a knot and place QR code on the bread and place on a well floured couche.
Final Fermentation

Best overnight at 8°C, covered. Take out and leave until ready to bake (Approx. 60 min.).

Decoration before baking

Dust with flour and stencil if you wish

Oven temperature

250°C down to 220°C with steam

Baking Time

+/- 30-35 min.
