In the summertime, the margarita and Aperol spritz are popular, while in the colder months we see a rise in coffee-based cocktails flavours like espresso martini or Irish coffee. 1. Mojito cheesecake

All the flavours of Havana’s favourite cocktail come together in this Mojito Cheesecake: lime, rum and mint. These ingredients are mixed into the cream that lays on top of a classic cheesecake base made from crushed digestive biscuits and butter. With 6% white rum in the cake, you have to be careful not to get light-headed if you eat too many pieces.

2. Pina colada macaron

With this two-toned pina colada macaron, the bakers at Mademoiselle Macaron have created a macaron that looks just as festive as its drinkable counterpart. In the center of this French almond-based indulgence, you’ll find a rum cream with a layer of pineapple curd. A real tropical treat!

3. Aperol spritz cake

The bittersweet Aperol spritz is the quintessential Italian summertime cocktail, the orange-red hue makes it super recognisable. In this Aperol spritz cake, the typical colour returns in the bright and shiny Aperol jelly. There are also layers of orange cream and mousse with notes of prosecco, making this cake just as lavish as its cocktail counterpart.

4. Espresso-martini cupcake

The espresso-martini cupcake appeals to both coffee and cocktail lovers. The boozy bakers at Primrose Bakery have created a cupcake that uses the same drinks and flavours. They start with making an espresso sponge cake with coffee beans baked in the middle. They soak this cake in vodka, ice it with Kahlua buttercream and finish it off with a dusting of espresso powder.

6. Gin-tonic semifreddo

The gin-tonic semifreddo by Cook Food is a real treat for lovers of this aromatic and slightly bitter cocktail. It’s a lemon gin parfait, topped with a lemon curd that is made with both gin and Indian Fever-Tree tonic. And just like the cocktail, it is best-served ice cold. For a family-friendly version, the gin can be swapped for a non-alcoholic one.

7. Strawberry daiquiri doughnut

Sweet strawberries, sour limes and a punch from the rum, those three ingredients form the irresistible strawberry daiquiri. Lady Glaze Doughnuts uses them all for their donut version of the cocktail. Rum returns in the cream that fills the brioche like donut, strawberries are used for the glossy pink glaze and lime is added through the crumble. There’s even a lime wedge-shaped candy on top.

8. Irish coffee chocolate bar

Cherry liqueur chocolates have been around forever, but we’re gradually spotting chocolates with different types of cocktail flavours. The brand Lindt Creation for instance came up with an Irish coffee chocolate bar. In the center of the silky milk chocolate is a filling of whiskey, cream, coffee and sugar: the ingredients of the warming and cosy after-dinner cocktail.
