When focusing on the taste of a product, our five senses are not enough. According to Prof. Massimiliano Bruni, head of the Food & Beverage Knowledge Centre in Milan, you need to add a sixth sense: the mind, or what we think about the product. If you know that a product comes from Vietnam or Guatemala, it adds an extra dimension to the flavour of the product. According to Bruni this shows the great potential for storytelling.
