Working Method

Preparation steps

Mixing spiral: 5 minutes 1st speed / 5 minutes fast speed
Dough temperature: 28º C
Bulk fermentation: 30 minutes ambient temperature
Scale: 50 g
Intermediate proof: 30 minutes ambient temperature
Make up: Round place in wooden square mould, in the order like the picture.
Final fermentation: 65 minutes 28º C, 80% humidity
Decoration before baking: Cut in from the corner to the middle
Oven temperature: 230º C
​Baking time: 35 minutes
